Ingredients

  • 1.5 lb boneless, skinless chicken breast (~110g protein)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cooked brown rice
  • 1/2 cup canned black beans (drained and rinsed)
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 red bell pepper, chopped
  • 1/4 red onion, chopped
  • 1/2 avocado, sliced
  • Juice of 1 lime
  • Optional toppings: Greek yogurt, salsa, cilantro

Instructions

  1. Mix spices with olive oil and coat chicken. Grill or pan-sear until fully cooked (internal temp 165°F).
  2. Cook brown rice according to package instructions.
  3. Heat beans and corn separately if desired.
  4. Assemble bowl: rice as base, then top with chopped chicken, beans, corn, peppers, onion, avocado.
  5. Squeeze lime over top. Add optional toppings as desired.

Notes

  • Swap brown rice for quinoa or cauliflower rice to adjust macros.
  • Use Greek yogurt instead of sour cream for more protein.
  • Make a big batch and store separately for meal prep.
