Ingredients
- 1.5 lb boneless, skinless chicken breast (~110g protein)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup cooked brown rice
- 1/2 cup canned black beans (drained and rinsed)
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 red bell pepper, chopped
- 1/4 red onion, chopped
- 1/2 avocado, sliced
- Juice of 1 lime
- Optional toppings: Greek yogurt, salsa, cilantro
Instructions
- Mix spices with olive oil and coat chicken. Grill or pan-sear until fully cooked (internal temp 165°F).
- Cook brown rice according to package instructions.
- Heat beans and corn separately if desired.
- Assemble bowl: rice as base, then top with chopped chicken, beans, corn, peppers, onion, avocado.
- Squeeze lime over top. Add optional toppings as desired.
Notes
- Swap brown rice for quinoa or cauliflower rice to adjust macros.
- Use Greek yogurt instead of sour cream for more protein.
- Make a big batch and store separately for meal prep.
