Ingredients
- Spam: 2 cans, cut into ½" cubes
- Sushi Rice: 8 cups cooked (or cook 2 cups uncooked short-grain rice according to package instructions)
- Soy Sauce: ¼ cup low-sodium
- Mirin (rice wine): ¼ cup
- White Sugar: 2 tbsp
- Green Onion: 1, thinly sliced (for garnish)
- Japanese Mayo (e.g., Kewpie): as needed for drizzling
- Furikake: as needed (to season rice and top)
- Roasted Seaweed Sheets: cut into strips or squares, for serving
(Optional) Sushi Rice Seasoning:_ 2 tsp rice vinegar, ¼ tsp sugar, ¼ tsp salt
Instructions
- Prepare the Spam: Heat a nonstick skillet over medium heat. Add cubed Spam, fry until golden-crispy (5–10 min), remove from heat.
- Make the Glaze: Whisk ¼ cup soy sauce, ¼ cup mirin, 2 tbsp sugar. Return Spam to low heat, pour glaze, simmer until sticky (2–3 min), set aside.
- Season the Rice (Optional): Mix 2 tsp rice vinegar, ¼ tsp sugar, ¼ tsp salt. Fold into 8 cups warm rice.
- Assemble: Preheat broiler to 500°F. In a 9×13" dish, layer rice, sprinkle furikake, add glazed Spam, drizzle mayo, sprinkle more furikake.
- Broil: Broil top rack 3 min, until mayo bubbles and chars lightly.
- Garnish & Serve: Rest 1–2 min, top with green onion. Serve hot with seaweed sheets. Scoop onto seaweed, fold, and enjoy.
Tips & Variations
- Make-Ahead: Cook/glaze Spam ahead, store separately, assemble and broil when ready.
- Extra Creaminess: Add more mayo or a thin layer of cream cheese under Spam.
- Spicy Kick: Drizzle Sriracha or spicy mayo before broiling.
- Vegetarian: Use cubed, pan-fried tofu glazed in soy-mirin mixture.
