Protein Pancakes with Berries and greek Yogurt

Fluffy, high-protein pancakes made with oats and protein powder, topped with berries and Greek yogurt for a sweet but macro-friendly meal.

Ingredients

  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder (~25g protein)
  • 1/2 tsp baking powder
  • 1/2 banana
  • 2 egg whites
  • 1/4 cup Greek yogurt (plus extra for topping)
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1/2 tsp cinnamon
  • 1/2 cup mixed berries (blueberries, raspberries, etc.)
  • Cooking spray or butter for the pan

Instructions

  1. Blend oats, banana, egg whites, protein powder, baking powder, cinnamon, milk, and yogurt until smooth.
  2. Heat nonstick pan over medium heat. Lightly grease.
  3. Pour batter into small pancakes. Cook 2–3 min each side until golden.
  4. Top with berries and a dollop of Greek yogurt.

Notes

  • Use casein for thicker pancakes, whey for fluffier.
  • Sweeten with stevia or honey if needed.
  • Store in fridge and reheat in toaster.
