Creamy Alfredo Chicken Broccoli Pasta

Ingredients
- 1 lb fettuccine pasta
- 2 chicken breasts, cubed
- 2 cups broccoli florets
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 tbsp butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1/4 tsp nutmeg (optional)
- 2 tbsp olive oil
Instructions
- Cook pasta according to package directions, add broccoli in last 3 minutes
- Meanwhile, season chicken with salt and pepper
- Heat olive oil in large skillet, cook chicken until golden
- Remove chicken, add butter and garlic to pan
- Sauté garlic for 1 minute, then add heavy cream
- Simmer for 3-4 minutes until slightly thickened
- Add Parmesan cheese, stirring until melted
- Return chicken to pan, add drained pasta and broccoli
- Toss everything together, season to taste
Notes
- Use freshly grated Parmesan for best results
- Don't let sauce boil or it may separate
- Reserve pasta water to thin sauce if needed
- Can substitute half-and-half for a lighter version
