Creamy Alfredo Chicken Broccoli Pasta

Rich and creamy alfredo pasta with tender chicken and fresh broccoli. A comforting Italian-American classic.

Ingredients

  • 1 lb fettuccine pasta
  • 2 chicken breasts, cubed
  • 2 cups broccoli florets
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 tsp nutmeg (optional)
  • 2 tbsp olive oil

Instructions

  1. Cook pasta according to package directions, add broccoli in last 3 minutes
  2. Meanwhile, season chicken with salt and pepper
  3. Heat olive oil in large skillet, cook chicken until golden
  4. Remove chicken, add butter and garlic to pan
  5. Sauté garlic for 1 minute, then add heavy cream
  6. Simmer for 3-4 minutes until slightly thickened
  7. Add Parmesan cheese, stirring until melted
  8. Return chicken to pan, add drained pasta and broccoli
  9. Toss everything together, season to taste

Notes

  • Use freshly grated Parmesan for best results
  • Don't let sauce boil or it may separate
  • Reserve pasta water to thin sauce if needed
  • Can substitute half-and-half for a lighter version
